Breads and pastries that came by sea

You think the flatbread at your stall is local. Its name points across an ocean.

Bread is not native to this region. Rice is. So every bread and pastry on this desk arrived from somewhere.

Roti canai came with Tamil Muslim migrants under British rule. It spread through Penang and Melaka. In India, nobody calls it by that name. The bread that left became something new where it landed.

That pattern repeats. A pastry from one empire, a loaf from another, both reshaped by the stall that sold them.

Here we follow each one from the port to the breakfast table. The twist is nearly always the same. It came from away. Now it is fully local.

Roti canai: a name that points to Chennai

The word canai traces to Chennai. Here is how Tamil Muslim migrants carried the flatbread to Penang and Melaka, where it took a name India never used.
